Traditional Biroldo

Born as the "Reney" in the kitchen, the Biroldo aimed to recover the cuttings and offal difficult to use; nowadays is the most peculiar salami of Lucca. It is prepared using different parts of a pork: head, cheek, strips of bacon and some offal such as heart, tongue and rinds: all is boiled once, minced and made in sausages with pork blood flavoured with salt and spices. After a second boiling lasting several hours, it is cooled in cold storage. It is a delicious food for people loving strong tastes.
