Sbriciolona salami

Salami typical of Florentine Chianti, it is made with lean and fat meats tender and soft. Its non-excessive seasoning and meat mix cause it to more or less crumble at the cut, hence the name "Sbriciolona". The name comes from the intense flavor that fennel seeds release into the dough. Appetite and soft on the palate, it remains one of the most characteristic cured meats.
